Healthy French Toast

I discovered the French toast a few years ago and I loved it. It was one of my favorite options in a breakfast buffet until I found out what the ingredients were and I stopped eating it. As I said before, you do not have to stop eating what you like, you have to find the best version and that’s why I bring you a healthy French toast. One of the most important details in this recipe is to find a healthy bread.

  • 3-4 slices of artisanal whole grain bread or healthy bread
  • 1 cup almond milk or rice without sugar
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon of coconut oil, for frying
  • 1 tablespoon of maple syrup
  • 1/2 tza of red fruits
  • 1 tablespoon chopped walnuts

Mix the almond milk with the chia seeds, cinnamon and vanilla. Let the chia seeds hydrate for 10 minutes or more. Then submerge each slice of bread in the mixture for 30 seconds each side. Add coconut oil to a skillet over medium-high heat until melted. Place each slice of bread in the pan and cook, until golden brown on the bottom. Turn the toast and cook the other side until golden brown too – 3-4 minutes.

Divide it in two plates and cover with red fruits, maple syrup and chopped nuts
