
Brie, Tomato and Basil Baskets

Hello helloooo! I’m excited to share this recipe with you :) It’s soooo easy and yummy! And served warm with the melted brie… it can kill weak souls. All you need is puff pastry (you can find it in a supermarket), brie cheese (camembert also works), tomato, basil and voilá! It’s perfect when you have people over because you can assemble them beforehand and then put them in the oven when they arrive. You’ll see how they love it!
Portions: 6 baskets
Ingredients:
– 200g puff pastry (it can be ready rolled like mine or in a block, in which case you need to roll it first)
– 125g brie
– 1 tomato
– 20g basil leaves
– salt and pepper to taste
– olive oil
– you’ll also need a muffin or cupcake pan
Procedure:
1. The base. If you have a large pre-rolled dough like me, then cut it in squares that fin into your muffin pan. Then put inside some brie pieces. On top of this put some basil leaves, and a thin slice of tomato (important that it’s thin or the dough will soften). Add salt to taste and a bit of olive oil.
2. Fold and bake :). Fold the excess of dough onto the fillings. This now goes into the oven at 180C for 20min minimum or until you see that the dough is nice and golden.
3.LET’S EAT! The baskets are now ready! I decorated them with a few basil leaves because green always helps :) Bon appetit!
