Lunchbox-Friendly Wrap with Hummus

Now that classes are back and summer is over, we need a nice recipe that we can eat at room temperature (not every recipe reheats well) for our lunchbox. And obviously it has to be yummy! This time I bring you my recipe for hummus, which can be used as a dip, for sandwiches, or in this case, in a delicious wrap. And if this wasn’t enough, it’s also light ;).Portions: 4 wraps

Ingredients:
For the hummus:
– 420g cooked chickpeas
– 4 tbsp lime juice
– 190ml olive oil
– 4 tbsp tahini (sesame paste)
– 1 garlic clove, finely grated
– salt and pepper to taste

Also, for the wraps:
– 4 tortillas, I used wholegrain
– 3 tomatoes, sliced
– 1 cucumber
– salt to taste
– 8 slices of turkey ham

Procedure:
1. Put all the ingredients for the hummus in a food processor or use a minipimmer. You can also use a blender, but you’ll probably have to add more olive oil so it can actually blend it without overheating, resulting a bit more liquid. Stop when it’s all nice and evenly smooth. 2. Now we’re going to assemble our wrap. Spread the hummus in the tortilla and arrange the rest of the ingredients on top. Don’t forget to add some salt to the vegetables. 3. To close it, the best way is to fold the top and bottom in first before rolling it. This way, the filling won’t go everywhere when you bite in.4. Done! It’s going to become your favourite lunch whether you’re working, studying or simply surviving one more day ;)
