Healthy Strawberry and Banana Muffins

Hello! Happy Monday! Today I want to share a dessert recipe so we can have a sweet week. Cold makes you crave sweet? That happens to me always,  happily eating healthy does not mean stop eating sweet. It is simply replacing some ingredients to make the desserts more nutritious. These muffins can be a good choice for breakfast, for our children lunch boxes or also depending on how active you are they can be included  in the middle of the day.

Ingredients

2 tablespoons flaxseed flour
2 tablespoons water
270g oats (You can choose gluten free oats)
2 ripe bananas made  porridge
1/2 tsp chopped strawberries
1/2 tza of homemade applesauce without sugar
1/4 tsp of maple syrup
1 tablespoon baking powder
2 teaspoons cinnamon
2 teaspoons vanilla
1/2 teaspoon salt
Preparation

Pre heat the oven to 190º C and grease with coconut oil a mold for 12 muffins.
Mix the flaxseed flour with the water in a bowl and let it stand for 10 minutes until it has a more doughy consistency. * *This is the egg replacement in vegan desserts.
In a bowl, combine the flaxseed mixture with oats, bananas, strawberries, apple paste, maple syrup, baking powder, cinnamon, vanilla and salt. Mix all the ingredients.
Pour the preparation into the mold filling each space 2/3.

If you want you can decorate it with a slice of banana or strawberry as in the picture.
Bake for 7 to 10 minutes
