Healthy Chocolate Breakfast

If you love chocolate this recipe is for you … Today I bring you a delicious breakfast! As you might heard breakfast is one of the most important meals because it gives us the energy to start the day. In addition there are studies that show that taking a healthy and balanced breakfast helps control appetite during the rest of the day.
In this recipe I have included two SUPER FOODS (cocoa and quinoa) to ensure that we have the best quality of energy throughout the day.
QUINOA AND CHOCOLATE BOWL
- 1 cup uncooked white quinoa
- 1 cup (240 ml) almond milk without sugar
- 2 tablespoons (10 g) of sugar-free cocoa powder
- 2-3 tablespoons (30-45 ml) of coconut sugar or honey
- 1/2 teaspoon of pure vanilla extract
- 3-4 squares of chopped black chocolate
To serve (optional)
- Strawberries or blueberries
- Sliced banana
- Chia seeds
Rinse the quinoa well for 2 minutes. Prepare a small pot over medium heat. Once its already hot, add the quinoa.
When is cooked dry the water and toast it. Add almond milk and stir. Bring to a boil over high heat, then turn heat to low and cook for 20-25 minutes, uncovered, stirring occasionally.
Once the liquid is absorbed and the quinoa is tender, remove it from the heat and add the cocoa powder, honey or coconut sugar and vanilla (optional). Taste and adjust the flavor as needed. Add a little more almond milk if you prefer the texture diluent. Serve each quinoa dish with the chocolate and your favorite fruits.
You can have it ready and refrigerate for 2 or 3 days to be able to eat it again!
